Lemony Turmeric Date Balls

A wonderful sweet treat without any added sugar! This recipe can be made ahead of time. It's simply delicious!

Ingredients
  

  • 12 qty Medjool dates
  • 1 cup Rolled Oats
  • 1/2 cup Almonds
  • 1 tbsp Chia Seeds
  • 4 tbsp Lemon juice
  • 1 tsp Lemon Zest
  • 1 tsp Vanilla Extract
  • 1 tsp Ground turmeric
  • 1/2 cup Shredded coconut for dusting Look for one with no added sugar
  • 1 scoop  Juice Plus+ Complete Vanilla Shake

Notes

  1. Remove the pits from dates and soak in hot water for 3 minutes.
     
  2. Place almonds in food processor and pulse until roughly chopped.
     
  3. Drain dates and add to food processor, saving the water.
     
  4. Add all the other ingredients (excluding shredded coconut) to a food processor and blend until mixture turns into a dough-like consistency.
     
  5. Add 1 tbsp or more of date water only if the mixture is too dry.
     
  6. With the small cookie dough scoop, scoop the mixture and roll into balls.
     
  7. Roll the balls in shredded coconut and place on plate, tray, or container. (If you prefer the coconut to be more fine like a dusting, grind in a coffee grinder first.)
     
  8. Store balls in an airtight container in the refrigerator. Keep up to 1 week.
