Gluten-Free, Dairy-Free Tres Leches Cake

Tres leches cake has always been one of my favorites. When I asked my husband what kind of cake he wanted for his 39th birthday, he said “Tres leches cake.” I always love making healthier versions of the food my family enjoys and find out that we also love the healthier version! You only turn 39 once! Be well. Do more. Love life!

Ingredients
  

Cake

  • 1 cup Coconut flour
  • 1 cup Almond Flour If nut allergies just use Coconut Flour
  • 1/2 cup Tapioca flour
  • 1 tsp Baking Soda
  • 1/2 tsp Salt
  • 1 cup Coconut oil melted
  • 1 cup Coconut Milk full fat
  • 1/4 cup Maple Syrup or Honey or combo
  • 1 tsp Vanilla Extract
  • 6 qty Eggs yolk and whites separated

Condensed Milk

  • 1.5 cans Coconut Mlk full fat
  • 1/4 cup Maple Syrup or Honey or combo

Whipped Cream

  • 1 can Coconut Cream refrigerated overnight or for at least 6 hours
  • 2 tsp Maple Syrup or Honey to taste
  • 1/2 tsp Vanilla Extract

Optional Toppings

  • Fruit of your choice. I love blueberries strawberries, peaches
  • Chopped chocolate bar or chocolate chips
  • Coconut Flkes

Notes

Cake
  1. Preheat oven to 350°F.
     
  2. Grease a 9"x9" glass baking dish with coconut oil.
     
  3. In a bowl, combine dry cake ingredients.
     
  4. In another bowl combine wet ingredients except for egg whites, and mix well
     
  5. Combine wet ingredients with dry ingredients. Mix with a hand mixer.
     
  6. Beat egg whites with a hand mixer or stand mixer until stiff peaks form.
     
  7. Add egg whites to cake batter slowly stirring in.
     
  8. Pour cake batter into baking dish and bake for 30 minutes.
     
  9. Meanwhile, place ingredients for condensed milk into a small pot and heat on the stove. Bring to a boil then quickly reduce heat to a simmer and stir occasionally for 20 minutes, and let cool down.
     
  10. When cake is done remove from oven and allow to cool. For quicker cooling, remove cake from baking dish and place on a wire rack.
     
  11. Once cake is cooled, place back into a baking dish. Poke holes throughout the cake. Make it holy!
     
  12. Using a tablespoon, pour condensed milk on top of cake slowly, making sure to cover the entire cake.
     
Whipped Cream
  1. Place ingredients for whipped cream into a bowl (preferably a cold bowl), and using a hand mixer or stand mixer, whip it up until fluffy like whipped cream (about 3-5 minutes).
     
  2. Place in refrigerator until ready to serve.
     
Decorate the Cake
  1. If using a different dish for serving, move cake to that serving dish. If using the baking dish, leave it in the dish.
     
  2. Spread whipped cream all over cake.
     
  3. Decorate with your choice of toppings or serve without toppings. If using fruit like strawberries and peaches, you can thinly slice them.
