Almond Joy Energy Balls

What a guiltless treat! Almond Joy was one of my favorite chocolates to eat when I was growing up. Now I can enjoy it again with this super healthy version that’s great for an everyday something sweet! Thank you Juice Plus+!
If you are doing the Shred10, this can be a great snack option.

Ingredients
  

  • 12 qty Large pitted dates about 1 cup
  • 1 cup Hot water
  • 3/4 cup Unsweetened shredded coconut divided - 1/4 c & 1/2c
  • 1/2 cup Almonds
  • 2 tbsp Almond Butter
  • 1 scoop Chocolate Juice Plus+ Complete
  • 1 tbsp Cocoa Powder

Notes

  1. Soak the dates in hot water to soften for about 10 minutes
     
  2. Take 1/4 cup of the shredded coconut and grind in a spice/coffee grinder to make a fine powder for coating the almond joy balls at the end.
     
  3. Place almonds in a food processor and chop for about 20-30 seconds
     
  4. Add the dates and about 2 tbsp of the water to the food processor (reserve the remaining water to use in a smoothie).
     
  5. Add almond butter, 1/2 cup shredded coconut, and Chocolate Juice Plus+ Complete to food processor and process until all ingredients are well combined. Should make a paste. You may add some of the date water to get a softer consistency if you like.
     
  6. Using a cookie dough scoop, scoop paste and roll into balls, taking each ball and rolling into the coconut powder for finishing.
