Almond Joy Energy Balls
It tastes so much like the original, but this is something I wouldn’t mind my kids eating everyday. How can something that tastes so good, be good for you? Try it and you’ll see what I mean!

Ingredients
  • 12qty Large pitted dates(about 1 cup)
  • 1cup Hot water
  • 3/4cup Unsweetened shredded coconut, divided – 1/4 c & 1/2c
  • 1/2cup Almonds
  • 2tbsp Almond Butter
  • 1scoop Chocolate Juice Plus+ Complete
  • 1tbsp Cocoa Powder
Instructions
  1. Soak the dates in hot water to soften for about 10 minutes
  2. Take 1/4 cup of the shredded coconut and grind in a spice/coffee grinder to make a fine powder for coating the almond joy balls at the end.
  3. Place almonds in a food processor and chop for about 20-30 seconds
  4. Add the dates and about 2 tbsp of the water to the food processor (reserve the remaining water to use in a smoothie).
  5. Add almond butter, 1/2 cup shredded coconut, and Chocolate Juice Plus+ Complete to food processor and process until all ingredients are well combined. Should make a paste. You may add some of the date water to get a softer consistency if you like.
  6. Using a cookie dough scoop, scoop paste and roll into balls, taking each ball and rolling into the coconut powder for finishing.
